Who’s ready to get making?
Start by gathering your ingredients. You’ll need pumpkin puree, maple syrup, almond butter, coconut cream, almond flour and coconut flour for the balls. Plus, you’ll also need cinnamon and coconut sugar for the outside.
If you haven’t tried coconut sugar yet, you should — it’s absolutely delightful.
Now, stir together all of those ingredients for the balls. It won’t take long — or too much effort.
Then it’s time to make the balls. A medium cookie scoop makes quick work of making these No-Bake Pumpkin Bites. But you could also do it with spoons if you need to — they just won’t be as perfect or pretty.
Once you’ve scooped them all out, those balls need to chill in the fridge for a bit. This will help them firm up. Put them on a tray lined with waxed paper or parchment paper. This will ensure they are easy to remove later.
Finally, roll those balls in the cinnamon-coconut sugar mixture.

No-Bake Pumpkin Bites
These easy, quick, no-bake Pumpkin Bites taste like pumpkin pie and make a great addition to any lunch box.
Ingredients
- ½ cup pumpkin puree
- ¼ cup maple syrup
- 4 tablespoons almond butter
- 2 tablespoons coconut cream
- 2 cups almond flour
- ¼ cup coconut flour
- 2 teaspoons cinnamon, for dusting
- ¼ cup coconut sugar, for dusting
Instructions
In a large bowl stir together the pumpkin puree, maple syrup, almond butter, coconut cream, almond flour and coconut flour until well combined.
Scoop into balls and place onto a wax paper- or parchment paper-lined tray. (A medium cookie scoop makes quick work of this!) Chill in the refrigerator for 20-30 minutes.
In a shallow bowl, sift together cinnamon and coconut sugar. A wire whisk can do this quickly and easily.
Remove the balls from the refrigerator and roll each in the cinnamon mixture to coat.
Serve and enjoy!
